  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup fresh apple cider
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 3 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar. Press into the bottom of a springform pan.
  2. In another bowl, beat cream cheese until smooth. Gradually add remaining sugar until fluffy. Mix in sour cream and apple cider. Add eggs one at a time until fully blended.
  3. Stir in cinnamon and nutmeg until combined. Pour filling over the crust.
  4. Bake for about 45 minutes or until edges are set but center jiggles slightly. Turn off oven and leave cheesecake inside with door ajar for one hour.
  5. Chill in refrigerator for at least four hours or overnight before serving.
