  • 1 lb lean ground beef (80/20)
  • 6 slices thick-cut bacon
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups Yukon Gold potatoes, diced
  • 1 cup shredded sharp cheddar cheese
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tbsp ketchup

Instructions

  1. In a large pot over medium heat, cook chopped bacon until crispy. Remove bacon and drain excess grease while leaving some in the pot.
  2. Sauté chopped onion and minced garlic in the remaining bacon fat until translucent.
  3. Add ground beef to the pot and cook until browned, draining any excess fat if needed.
  4. Stir in diced potatoes and chicken broth; bring to a boil then reduce heat and simmer for about 15 minutes or until potatoes are tender.
  5. Mix in heavy cream and shredded cheddar, stirring until the cheese melts.
  6. Add ketchup for flavor, mix well, and serve hot topped with reserved crispy bacon.
