  • ½ cup pearl barley
  • 2 medium carrots (diced)
  • 2 stalks celery (diced)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 6 cups low-sodium beef broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare the Ingredients: Dice the beef, chop the onions, carrots, celery, and mince the garlic.
  2. Sear the Beef: Heat oil in a large pot over medium-high heat. Add beef and brown on all sides, then remove from pot.
  3. Sauté Veggies: In the same pot, sauté onions and garlic until fragrant. Add carrots and celery; cook for about 5 minutes.
  4. Add Broth & Barley: Return beef to the pot along with pearl barley and beef broth. Season with thyme, salt, and pepper. Bring to a boil.
  5. Simmer: Reduce heat to low and cover; simmer for about an hour until beef is tender and barley is cooked.
