  • 1 cup pearl barley
  • 2 medium carrots, sliced thinly
  • 2 stalks celery, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 cups low-sodium beef broth
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté onions, carrots, and celery until golden brown (about 5 minutes).
  2. Add beef chuck pieces with salt and pepper; brown on all sides (about 7 minutes).
  3. Stir in minced garlic and cook until fragrant (about 1 minute).
  4. Pour in beef broth and add bay leaves; bring to a boil then reduce heat to low. Simmer gently for about 1 hour.
  5. Add pearl barley and continue cooking until tender (approximately 30 minutes).
  6. Taste and adjust seasoning before serving—remove bay leaves.
