  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 8 soft flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 cup sour cream
  • 1 cup enchilada sauce (store-bought or homemade)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 cup low-sodium chicken broth

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, cook chicken breasts in olive oil seasoned with salt and pepper for about 6-7 minutes per side until golden brown.
  3. Shred the cooked chicken and mix in garlic, half the cheese, enchilada sauce, cumin, chili powder, and sour cream in a large bowl.
  4. Fill each tortilla with the chicken mixture, roll them up tightly, and place seam-side down in the baking dish.
  5. Pour remaining enchilada sauce over the top and sprinkle with remaining cheese. Cover with foil and bake for 20 minutes; remove foil for the last 5 minutes to melt cheese.
  6. Serve hot with additional sauce drizzled on top.
