  • 2 large eggs
  • 1 cup Italian-seasoned breadcrumbs
  • 2 cups canned crushed tomatoes
  • 2 cloves fresh garlic, minced
  • 1 tsp dried oregano
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt and pepper. Dredge each piece in flour, dip in beaten eggs, then coat in breadcrumbs.
  3. Heat olive oil in a skillet over medium heat; sear each chicken breast for about 3 minutes per side until golden brown.
