  • 4 cloves fresh garlic, minced
  • 1/2 cup freshly squeezed lemon juice
  • 1/4 cup capers, drained
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Tenderize chicken breasts by placing them between plastic wrap and gently pound to about half an inch thick. Season with salt and pepper.
  2. Dredge each breast in flour, shaking off excess.
  3. In a large skillet over medium-high heat, heat olive oil and butter. Sauté chicken until golden brown on both sides (about 5 minutes per side). Remove from skillet and keep warm.
  4. In the same skillet, add minced garlic and sauté for about 30 seconds. Add lemon juice, capers, and chicken broth; scrape the browned bits from the pan.
  5. Let the sauce simmer for about 5 minutes until slightly reduced; stir in an additional tablespoon of butter if desired.
  6. Return the chicken to the skillet, allowing it to soak up the flavors for about 2 minutes before serving. Garnish with fresh parsley.
