  • 4 boneless, skinless chicken breasts (about 1 lb), sliced thin
  • 4 cups green or Napa cabbage, shredded
  • 1 cup bell peppers (any color), sliced
  • 1 cup carrots, shredded or julienned
  • 3 cloves garlic, minced
  • 4 tbsp low-sodium soy sauce
  • 2 tsp sesame oil
  • 1 tbsp honey

Instructions

  1. Wash and chop all vegetables into bite-sized pieces. Slice chicken breasts thinly.
  2. Heat a large wok or skillet over medium-high heat and add enough vegetable oil to coat the bottom.
  3. Add sliced chicken to the hot wok, season with salt and pepper, and stir-fry for 5-7 minutes until cooked through.
  4. Toss in minced garlic followed by bell peppers, carrots, and cabbage. Stir-fry for another 4-5 minutes until veggies are tender but still crisp.
  5. In a small bowl, whisk together soy sauce, sesame oil, and honey; pour over the stir-fried mixture in the wok.
  6. Toss everything together for an additional minute to meld flavors before serving.
