  • 1 cup red wine
  • 2 tsp fresh thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Brown the beef: Heat olive oil in a large pot over medium-high heat. Sear beef cubes until golden brown on all sides. Remove and set aside.
  2. Sauté aromatics: In the same pot, add onions and garlic. Sauté until translucent (about 5 minutes).
  3. Add vegetables: Stir in carrots and potatoes; cook for another few minutes.
  4. Deglaze: Pour in red wine, scraping up any browned bits from the bottom. Simmer for about 2 minutes.
  5. Simmer stew: Return beef to the pot, add beef broth, thyme, salt, and pepper. Bring to a boil before reducing heat to low. Cover and simmer for at least 1 hour.
  6. Serve: Check thickness before serving hot with crusty bread.
