  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 8 oz fettuccine or penne pasta
  • 2 cups fresh spinach
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente (8-10 minutes). Drain and set aside.
  2. In a skillet over medium heat, melt butter. Season chicken with salt and pepper; cook for about 5 minutes per side until golden brown and cooked through. Remove and keep warm.
  3. In the same skillet, sauté garlic for 1 minute until fragrant.
  4. Stir in heavy cream, gradually add Parmesan cheese until melted and smooth. Mix in soy sauce.
  5. Chop the chicken into bite-sized pieces and return to the skillet along with cooked pasta and spinach. Stir well to coat in the sauce.
  6. Serve immediately, garnished with additional Parmesan if desired.
