  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 tsp dried Italian herbs (basil, oregano, thyme)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season the chicken breasts with salt and pepper. In a large skillet over medium-high heat, heat olive oil and sear the chicken for 5-7 minutes on each side until golden brown. Remove from skillet and set aside.
  2. In the same skillet, lower the heat to medium and add minced garlic and cherry tomatoes. Sauté for 2-3 minutes until fragrant.
  3. Pour in heavy cream and chicken broth, adding the dried herbs. Stir until the mixture thickens slightly.
  4. Add fresh spinach and stir until wilted.
  5. Return the chicken to the skillet, spooning sauce over the top. Let simmer for an additional 3-5 minutes for flavors to meld.
