  • ½ cup mayonnaise (or Mexican crema)
  • 1 tablespoon chili powder
  • Juice of 2 limes
  • ½ cup crumbled Cotija cheese (or feta)
  • ¼ cup chopped fresh cilantro
  • 1 teaspoon garlic powder

Instructions

  1. Shuck and remove kernels from fresh corn cobs, or thaw frozen corn if using.
  2. In a skillet over medium-high heat, sauté corn kernels for 5-7 minutes until slightly browned.
  3. In a bowl, combine mayonnaise, lime juice, chili powder, garlic powder, and half of the Cotija cheese; mix until smooth.
  4. Add cooked corn to sauce mixture along with chopped cilantro; stir to combine.
  5. Transfer to serving bowls and top with remaining Cotija cheese and additional chili powder.
