  • 1 can (15 oz) black beans, drained and rinsed
  • 8 corn or flour tortillas
  • 2 cups shredded cheese (cheddar and Monterey Jack)
  • 2 cups enchilada sauce (store-bought or homemade)
  • ½ cup sour cream (for serving)
  • ¼ cup chopped cilantro (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with nonstick cooking spray.
  2. In a large skillet, heat 1 tablespoon olive oil over medium heat. Add the ground turkey and cook until browned, about 5-7 minutes.
  3. Stir in black beans and half of the enchilada sauce. Mix well and heat through.
  4. Spoon the turkey-bean mixture onto each tortilla, roll tightly, and place seam-side down in the prepared baking dish.
  5. Pour remaining enchilada sauce over the rolled enchiladas and sprinkle with cheese.
  6. Bake for 20-25 minutes until bubbly and golden brown. Serve hot topped with sour cream and cilantro.
