  • 1 tsp cumin

  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

  1. Preheat the oven to 400°F (200°C) and spray a large baking dish with nonstick cooking spray.
  2. Peel and dice sweet potatoes into bite-sized pieces; chop bell peppers and onion.
  3. In a skillet over medium heat, add olive oil, sauté onion and garlic until fragrant (about 3 minutes).

  5. Stir in diced sweet potatoes and bell peppers until well combined.
  6. Transfer mixture to the baking dish, cover with foil, and bake for 25 minutes until sweet potatoes are fork-tender. Remove foil, top with cheese, and bake uncovered for an additional 5 minutes until melted.
