  • 34 lbs beef chuck roast
  • 4 medium yellow onions, thinly sliced
  • 2 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 4 cloves garlic, minced
  • 1 tbsp fresh thyme (or 1 tsp dried thyme)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Slice onions thinly and mince garlic.
  2. Set your Instant Pot to the sauté function. Add olive oil and sear the beef chuck roast on all sides until browned (about 3-4 minutes per side). Remove from the pot.
  3. Add sliced onions with a pinch of salt to the pot. Sauté until golden brown (5-7 minutes).
  4. Return the beef to the pot, then add beef broth, Worcestershire sauce, minced garlic, and thyme. Stir to combine.
  5. Close the lid securely and set to high pressure for 60 minutes. Allow for natural pressure release.
  6. Remove the beef and shred it using two forks; return shredded beef to the onion mixture before serving.
