  • 8 oz spaghetti or fettuccine
  • 4 cups baby spinach
  • 3 cloves garlic, minced
  • 1/4 cup freshly squeezed lemon juice
  • 2 tbsp extra virgin olive oil
  • 1/4 cup grated Parmesan cheese (for garnish)

Instructions

  1. In a large pot, boil salted water. Add pasta and cook until al dente according to package instructions. Reserve 1/2 cup of pasta water before draining.
  2. In a skillet over medium heat, warm olive oil. Sauté minced garlic for about 1 minute until fragrant.
  3. Add spinach to the skillet and cook until wilted, approximately 2 minutes.
  4. Combine the cooked pasta with the spinach and garlic in the skillet. Stir in lemon juice and reserved pasta water to create a light sauce.
  5. Serve topped with grated Parmesan cheese.
