  • 1/2 cup seasoned breadcrumbs
  • 2 large eggs
  • 1/4 cup fresh parsley, chopped
  • 2 medium carrots, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth

Instructions

  1. In a large bowl, mix together ground beef, breadcrumbs, eggs, parsley, garlic, salt, and pepper. Form into small meatballs (about 1 inch).
  2. Heat olive oil in a large pot over medium heat. Brown the meatballs on all sides for about 5 minutes; remove and set aside.
  3. In the same pot, sauté onions and carrots until onions are translucent (about 5 minutes).
  4. Add chicken broth to the pot and bring to a simmer. Return meatballs to the pot along with any juices.
  5. Simmer for 20 minutes, stirring occasionally.
  6. Taste and adjust seasoning before serving hot with crusty bread.
