  • 1 cup cherry tomatoes, halved
  • ½ cup feta cheese, crumbled
  • ½ cup fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • 2 tbsp balsamic glaze

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place whole grain bread on a baking sheet; brush each slice lightly with olive oil.
  3. Spread halved cherry tomatoes over the bread; drizzle with olive oil and sprinkle with salt. Roast for about 15 minutes until tomatoes begin to burst.
  4. While tomatoes roast, crumble feta cheese.
  5. Once the tomatoes are done, top the toasted bread with roasted tomatoes, crumbled feta, and fresh basil.
  6. Drizzle with balsamic glaze and serve warm.
