  • ½ tsp black pepper
  • 1 tsp Italian herbs
  • ¼ tsp red pepper flakes (optional)
  • ½ cup ketchup
  • 2 tbsp balsamic vinegar

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. Mince the chicken breasts using a food processor or knife until fine.
  3. In a large bowl, mix minced chicken, breadcrumbs, onion, garlic, eggs, Parmesan cheese, salt, pepper, Italian herbs, and red pepper flakes until well combined.
  4. Shape the mixture into a loaf and place it in the prepared baking dish.
  5. In a small bowl, combine ketchup and balsamic vinegar; spread over the meatloaf.
  6. Bake for about 45 minutes or until cooked through (internal temperature of 165°F).
