  • 1/2 cup mayonnaise
  • 1/2 cup Greek yogurt
  • 2 tbsp freshly squeezed lime juice
  • 1/2 cup crumbled cotija cheese (or feta)

  • 1/4 cup chopped cilantro
  • Salt to taste

Instructions

  1. Husk the corn and remove silk strands. Grill or boil until tender (about 7-10 minutes). Let cool.
  2. Cut off kernels from the cob into a large bowl.
  3. In a separate bowl, mix mayonnaise, Greek yogurt, and lime juice until smooth.
  4. Combine corn with the dressing, adding chili powder and cilantro. Mix well.
  5. Top with crumbled cotija cheese and extra chili powder if desired.
  6. Chill in the fridge for about an hour before serving.
