Scale
  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1/2 cup unsulfured molasses
  • 1/2 cup brown sugar
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, oats, baking soda, salt, ginger, and cinnamon. Set aside.
  3. In a large bowl, cream together the softened butter, brown sugar, and molasses until fluffy. Add the egg and mix until fully incorporated.
  4. Gradually fold in the dry ingredients until just combined—avoid overmixing.
