Ingredients

Scale
  • 2 lbs russet potatoes, peeled and cubed
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup crispy bacon bits (or turkey bacon)
  • 1 cup shredded sharp cheddar cheese
  • 2 green onions, chopped for garnish

Instructions

  1. Prepare your ingredients by washing and peeling the russet potatoes. Cube them for even cooking. Chop the onion and mince the garlic.
  2. In a large pot over medium heat, melt butter or olive oil. Sauté onions until translucent (about 5 minutes), then add minced garlic and sauté until fragrant (1 minute).
  3. Add cubed potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  4. Use an immersion blender to blend until creamy but leave some chunks for texture.
  5. Stir in heavy cream; season with salt, pepper, and optional spices like paprika or cayenne. Simmer on low for another 5 minutes.
  6. Serve hot in bowls topped with bacon bits, cheddar cheese, and green onions.
