  • 1 lb fresh carrots, peeled and cut into 1-inch pieces
  • 2 tbsp olive oil
  • 1 head fresh garlic
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  3. In a bowl, combine carrot pieces with olive oil, salt, pepper, and mashed roasted garlic cloves. Mix in half of the Parmesan cheese.
  4. Spread the carrot mixture on the prepared baking sheet and sprinkle remaining Parmesan on top.
  5. Bake for 20-25 minutes until tender and caramelized.
  6. Serve garnished with parsley if desired.
