  • 2 tbsp extra virgin olive oil
  • 2 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt to taste
  • Pepper to taste
  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the chicken under cold water and pat dry with paper towels. Season generously with salt and pepper inside and out.
  3. In a small bowl, mix olive oil, garlic powder, paprika, oregano, and lemon juice. Rub this mixture all over the chicken.
  4. Place the chicken in a roasting pan and roast for about 1 hour and 20 minutes or until the internal temperature reaches 165°F (74°C).
