  • 1 cup low-sodium beef broth
  • 2 medium yellow onions, sliced
  • 4 cloves garlic, minced
  • 4 medium carrots, cut into chunks
  • 2 medium Yukon Gold potatoes, diced
  • 2 tsp fresh thyme leaves
  • 2 tsp fresh rosemary leaves
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping vegetables and seasoning the chuck roast with salt and pepper.
  2. Set your Instant Pot to 'Sauté' mode. Add olive oil and sear the chuck roast for about four minutes on each side until browned. Remove and set aside.
  3. Add onions and garlic to the pot; sauté for three minutes until softened.
  4. Deglaze the pot by pouring in beef broth, scraping up any brown bits from the bottom.
  5. Return the roast to the pot along with carrots, potatoes, thyme, rosemary, and balsamic vinegar.
  6. Close the lid and set to high pressure for 60 minutes.
  7. After cooking, allow natural release for ten minutes before manually releasing remaining steam.
  8. Serve hot with veggies arranged around the roast and drizzle some broth over top.
