Ingredients
-
1 block (8 oz) full-fat cream cheese
-
1 tbsp olive oil (optional, for crispier crust)
-
1 tbsp BBQ rub or Everything Bagel seasoning
-
1 tsp garlic powder (optional)
-
1 tsp smoked paprika
-
1 tbsp honey or hot honey (optional for drizzling)
-
Crackers, fresh veggies, or toasted bread (for serving)
Instructions
-
Preheat smoker to 225°F. (Or prep your grill for indirect heat with wood chips.)
-
Unwrap the cream cheese and place it on a foil-lined tray or in a small cast-iron skillet.
-
Score the top of the cream cheese with a knife in a criss-cross pattern.
-
Brush with olive oil if desired, then generously season with BBQ rub, garlic powder, and paprika.
-
Place in smoker and cook for 2 hours, or until golden on the outside and soft inside.
-
Carefully remove from smoker and let rest for 5 minutes.
-
Drizzle with honey and serve with your favorite dippers!
Notes
-
Use full-fat cream cheese for the best texture and flavor.
-
The longer it smokes, the more flavorful it becomes—just don’t go over 2.5 hours.
-
For a spicy kick, mix chipotle powder into your seasoning blend.
-
Great served warm, but still tasty chilled and spreadable the next day!
-
Try using flavored wood chips (like apple or pecan) for extra depth.
