  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 4 ripe tomatoes, diced
  • 1 cup fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts generously with salt and pepper.
  3. In a large skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute). Add diced tomatoes and simmer until soft.
  4. Stir in soy sauce and honey, mixing until well combined.
  5. Place seasoned chicken in the baking dish and pour the tomato sauce over it. Top with fresh basil leaves.
