  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 34 tbsp ice water
  • 3 medium fresh tomatoes, sliced
  • 1/2 cup goat cheese or feta, crumbled
  • 2 tbsp fresh basil or thyme, chopped

Instructions

  1. Preheat oven to 400°F (200°C). In a bowl, mix flour and salt. Cut in cold butter until crumbly. Gradually add ice water until dough forms. Wrap in plastic wrap; chill for 30 minutes.
  2. Roll out the dough on a floured surface to about 1/8-inch thick and transfer it to a pie dish. Trim excess.
  3. Place tomato slices on paper towels to absorb moisture. In another bowl, combine cheese and herbs.
  4. Layer half the tomatoes in the crust, sprinkle half the cheese mixture over them, then repeat with remaining tomatoes and cheese.
  5. Bake for 35-40 minutes until golden brown and bubbly.
  6. Cool slightly before slicing and serve warm.
