  • 1 cup thinly sliced cucumbers
  • 4 slices whole grain bread
  • 4 oz vegan cream cheese
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp chopped fresh dill

Instructions

  1. Wash cucumbers and slice them thinly, about 1/8 inch thick.
  2. In a bowl, mix the vegan cream cheese with lemon juice and dill until smooth.
  3. Spread the mixture generously on one side of each slice of bread.
  4. Layer cucumber slices on two of the bread slices, then top with the remaining slices (cream side down).
  5. Trim off crusts and cut into quarters or triangles.
  6. Serve on a platter, garnished with extra lemon wedges and dill.
