  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup chopped apples (preferably Granny Smith)
  • 1 cup powdered sugar (for the glaze)
  • 2 tbsp pure maple syrup (for the glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside.
  3. In another bowl, cream the softened butter with brown and granulated sugars until smooth. Add the egg and vanilla; mix well.
  4. Gradually combine the dry ingredients into the wet mixture until just incorporated. Fold in the chopped apples gently.
  5. Scoop tablespoon-sized portions onto prepared baking sheets about two inches apart. Bake for 12-15 minutes until edges are golden brown.
  6. For the glaze, mix powdered sugar and maple syrup until smooth. Drizzle over cooled cookies.
