  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs, room temperature
  • 2 medium Granny Smith apples, peeled and diced
  • 1 tsp ground cinnamon
  • 1/4 cup brown sugar
  • 1/2 cup rolled oats

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter; press into the bottom of lined muffin tins.
  2. In another bowl, beat cream cheese and sugar until smooth. Add vanilla and eggs one at a time, mixing well after each addition.
  3. Pour filling over crusts in muffin tins. Bake for about 20 minutes or until set but slightly jiggly.
  4. For the topping, sauté diced apples with brown sugar and cinnamon in a skillet until tender.
  5. Mix rolled oats with melted butter and cinnamon. Once cheesecakes cool slightly, layer apple mixture then oat topping on each cheesecake.
  6. Return to the oven for an additional 10 minutes until topping is golden brown.
