  • 1 cup diced tart apples (such as Granny Smith)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream the butter, granulated sugar, and brown sugar together until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, cinnamon, and salt. Gradually mix this dry blend into the wet ingredients until combined.
  5. Gently fold in the diced apples.
  6. Drop spoonfuls of dough onto prepared baking sheets about two inches apart.
  7. Bake for 12–15 minutes or until edges are lightly golden brown. Allow cooling slightly before serving.
