  • 2 salmon fillets (6 oz each)
  • 200g rice noodles
  • 1 cup mixed bell peppers, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • 2 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. Season salmon fillets with salt and pepper. Rinse under cold water and pat dry.
  2. Soak rice noodles in hot water according to package instructions until al dente; drain well.
  3. In a large skillet over medium heat, sauté mixed vegetables and garlic in a drizzle of oil for about 5 minutes until vibrant but still crunchy.
  4. Push veggies aside and add salmon fillets skin-side down; cook for about 6 minutes until crispy, then flip carefully to cook another 3 minutes or until cooked through.
  5. Add drained noodles along with soy sauce, honey, lime juice, salt, and pepper; toss gently over heat for an additional 2 minutes.
  6. Serve garnished with fresh cilantro if desired.
