  • 68 day-old croissants (torn into pieces)
  • 3 ripe bananas (sliced)
  • 4 large eggs
  • 2 cups whole milk
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together eggs, milk, brown sugar, cinnamon, and vanilla until frothy.
  3. Layer half of the croissant pieces in the baking dish, followed by half of the banana slices. Pour half of the custard mixture over it. Repeat with remaining ingredients.
  4. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
  5. Serve warm, drizzled with maple syrup or topped with whipped cream.
