  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 4 green onions, thinly sliced
  • 1 cup bell peppers, chopped (any color)
  • 2 cups cooked rice or quinoa
  • ¼ cup low-sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 2 tbsp Sriracha (adjust to taste)

Instructions

  1. Preheat your oven to 400°F (200°C). Prepare a baking dish with nonstick spray or parchment paper.
  2. Season chicken breasts with salt, pepper, and minced garlic. Place them in the baking dish.
  3. In a bowl, whisk together soy sauce, honey or maple syrup, and Sriracha until smooth.
  4. Drizzle half of the sauce over the chicken and bake for 25-30 minutes until fully cooked (internal temperature should reach 165°F).
  5. Cook rice or quinoa according to package instructions while the chicken bakes.
  6. Once cooked, slice chicken into bite-sized pieces. Assemble bowls with rice or quinoa topped with chicken, bell peppers, green onions, and remaining sauce.
