  • 2 cups roasted butternut squash (approx. 1 medium squash)
  • 1 cup Brie cheese, diced
  • 1 cup sharp cheddar cheese, shredded
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable or chicken broth
  • 1 cup lager or pale ale
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Halve the butternut squash, scoop out seeds, drizzle with olive oil, season with salt, and roast cut-side down for about 30-40 minutes until tender.
  2. In a large pot over medium heat, add olive oil and sauté onions until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
  3. Scoop the roasted squash into the pot. Pour in broth and beer; blend until smooth using an immersion blender or in batches with a regular blender.
  4. Return to medium heat; stir in Brie and cheddar until melted. Season with salt and pepper to taste.
  5. Serve hot in bowls with crusty bread or croutons.
