  • 2 cups fresh cauliflower florets
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable or chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 2 cups sharp cheddar cheese, shredded
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prep Your Veggies: Wash and chop broccoli and cauliflower into bite-sized pieces.
  2. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add onions and garlic; sauté until fragrant and translucent (about 5 minutes).
  3. Add Vegetables & Broth: Stir in chopped broccoli and cauliflower; coat with the onion-garlic mixture. Pour in broth to cover the vegetables.
