  • 1 medium head fresh broccoli (about 350g)
  • 1 cup whole-milk ricotta cheese (240g)
  • ½ cup grated Parmesan cheese (50g)
  • 2 cloves garlic, minced
  • 1 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly spray a baking dish with nonstick cooking spray.
  2. Wash and cut the broccoli into bite-sized florets.
  3. In a skillet over medium heat, add olive oil and sauté minced garlic for about one minute until fragrant. Add the broccoli florets and cook for another five minutes until bright green yet crisp.
  4. In a bowl, mix the sautéed broccoli, ricotta cheese, half of the grated Parmesan, salt, and pepper until well combined.
  5. Transfer the mixture into the prepared baking dish, sprinkle with remaining Parmesan, and bake for 25-30 minutes until bubbly and golden brown.
