  • 1 cup heavy cream

Instructions

  1. In a large pot over medium heat, add a splash of olive oil and sauté the diced onion until translucent (about 5 minutes). Stir in the minced garlic for an additional minute.
  2. Add the chopped broccoli to the pot and mix well with the aromatics.
  3. Pour in the broth, bring to a boil, then reduce heat and simmer for about 15 minutes until the broccoli is tender.
  4. Blend the soup until smooth using an immersion blender or by transferring batches to a countertop blender.
  5. Return blended soup to the pot (if using a countertop blender), stir in heavy cream, and season with salt and pepper to taste. Heat through.
  6. Serve hot, garnished with croutons or freshly cracked pepper if desired.
