  • 2 cups Brussels sprouts, finely chopped
  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil (for frying)
  • 1/2 cup mayonnaise
  • 1 medium tomato, diced
  • 1/4 cup fresh basil leaves, chopped
  • 1 tbsp lemon juice

Instructions

  1. Finely chop the Brussels sprouts and place them in a large bowl.
  2. Add flour, beaten egg, Parmesan cheese, garlic powder, salt, and pepper. Mix until well combined.
  3. Heat olive oil in a skillet over medium heat. Scoop about 2 tablespoons of the mixture into the pan for each fritter.
  4. Cook each fritter for 3-4 minutes on each side until golden brown.
  5. For the aioli, combine mayonnaise, diced tomato, basil leaves, and lemon juice in a small bowl until smooth.
  6. Serve warm fritters with aioli drizzled on top or on the side.
