  • 2 cups roasted butternut squash (about 1 medium squash)
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 tsp salt
  • 8 oz Italian sausage (sweet or spicy)
  • 3 tbsp unsalted butter
  • 6 sage leaves
  • Parmesan cheese (for serving)

Instructions

  1. Preheat oven to 400°F (200°C). Halve the butternut squash, scoop out seeds, and roast cut-side down on a parchment-lined baking sheet for 30-40 minutes until tender. Allow to cool slightly.
  2. While the squash roasts, cook the Italian sausage in a skillet over medium heat until browned (about 5-7 minutes). Set aside.
  3. Scoop out the flesh of roasted squash into a bowl and mash until smooth. Gradually mix in flour, egg, and salt to form a soft dough.
  4. On a floured surface, roll the dough into ropes about an inch thick and cut into bite-sized pieces. Press each piece with a fork for texture.
  5. Boil salted water in a pot and cook gnocchi until they float (about 2 minutes). Remove with a slotted spoon.
  6. In the same skillet used for sausage, melt butter and add sage leaves over medium heat until fragrant (about 2 minutes). Toss in cooked gnocchi and sausage until well combined.
