  • 2 tbsp olive oil
  • 2 green onions (chopped, for garnish)

Instructions

  2. In a large skillet over medium heat, add olive oil. Sauté the diced onion and bell peppers until softened, about 5 minutes.
  3. Add minced garlic and sauté for an additional minute until fragrant.

  5. Add rice and chicken broth; stir well to combine. Increase heat to bring to a boil.
