  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 2 large Granny Smith apples, diced (about 2 cups)
  • 1 tsp ground cinnamon
  • ½ cup caramel sauce

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of the pan and bake for 10 minutes.
  3. In another bowl, beat cream cheese, sour cream, and sugar until smooth. Add eggs one at a time and stir in cinnamon. Fold in diced apples.
  4. Pour the cheesecake mixture over the baked crust.
  5. Bake for 30-35 minutes until set around edges but slightly wobbly in center.
  6. Allow to cool completely before chilling in the fridge for at least two hours. Drizzle caramel sauce before serving.
