  • 1/2 cup granulated sugar

  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 cup unsalted butter (softened)
  • 2 tsp vanilla extract
  • 2 large eggs (room temperature)
  • 1 cup caramel candies (unwrapped)
  • 1/4 cup apple cider

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In another bowl, cream softened butter with brown and granulated sugars until light and fluffy.
  4. Beat in eggs one at a time followed by vanilla extract until fully combined.
  5. Gradually add dry ingredients into the wet mixture along with apple cider; mix until just combined.
  6. Scoop about a tablespoon of dough, place a caramel candy in the center, wrap the dough around it, and roll into balls.
  7. Bake for about 10-12 minutes until golden around the edges. Let cool slightly before transferring to wire racks.
