  • 1 medium butternut squash, peeled and diced (about 4 cups)
  • 2 large sweet onions, thinly sliced
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth

  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Toss diced butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender.
