  • 1 large egg
  • 1 cup grated carrots (about 2 medium carrots)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream softened butter and egg until light and fluffy; stir in grated carrots.
  4. Gradually combine the dry ingredients into the wet mixture until just mixed. Add nuts if desired.
  5. Drop spoonfuls of dough onto prepared sheets about two inches apart.
