  • 6 medium fresh carrots, peeled and chopped
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup coconut milk
  • 1-inch piece fresh ginger, grated
  • 2 tablespoons olive oil

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté diced onions until translucent (about 5 minutes). Stir in minced garlic and grated ginger; cook for another minute.
  2. Add chopped carrots and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer uncovered for about 20 minutes or until carrots are tender.
  3. Remove from heat and blend the soup until smooth using an immersion blender (or in batches with a regular blender).
  4. Stir in coconut milk and heat over low until warmed through.
