  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 cup cold water
  • 1 cup fresh cherries, pitted and halved
  • 8 oz mascarpone cheese
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour and sugar; cut in cold butter until crumbly. Gradually add cold water until dough forms.
  2. Roll out the dough on a floured surface and fit it into a tart pan. Trim excess dough.
  3. Blind bake the crust with parchment and weights for 15 minutes. Remove weights; bake an additional 5 minutes until golden.
  4. Beat mascarpone, sugar, and vanilla in a bowl until smooth. Spread over cooled crust and top with cherries.
  5. Chill for at least 1 hour before serving.
