  • 1/4 tsp nutmeg
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract followed by the molasses until well combined.
  4. In a separate bowl, whisk together flour, ginger, cinnamon, nutmeg, baking soda, and salt. Gradually add to the wet mixture until fully incorporated.
  5. Drop rounded tablespoons of dough onto prepared baking sheets about two inches apart.
  6. Bake for 10-12 minutes or until golden brown around the edges but still soft in the center. Cool on baking sheets before transferring to a wire rack.
