  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 cups whole milk
  • 4 tbsp unsalted butter
  • 1 cup panko breadcrumbs
  • 1/4 cup all-purpose flour
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Chop chicken into bite-sized pieces.
  2. Cook macaroni in boiling salted water until al dente; drain and set aside.
  3. In a skillet over medium heat, melt butter, add chicken, and sauté until golden brown (about 5 minutes); season with salt and pepper.
  4. In a saucepan, melt remaining butter over medium heat. Stir in flour until smooth; gradually whisk in milk until thickened. Add shredded cheeses until melted.
  5. Combine pasta and sautéed chicken with cheese sauce, then transfer to a greased baking dish. Top with panko breadcrumbs.
  6. Bake for about 20 minutes or until golden brown.
